Beacon Blue
We know you love a decent blue cheese, so we created this tasty soft blue goat’s cheese for you which will go perfectly with celery crackers – the pungency of the cheese balancing the savoury celery taste well.
The curds are cut by hand, then placed into round moulds before leaving them to drain. The next day they are pierced to allow the blue veining to start, then wrapped individually by hand. These tasty blue cheeses need at least five weeks to mature and it’s our job to keep an eye on them so that we cut them when they are just right. This is a distinctive cheese for your cheeseboard; your friends will be coming back for more.
