Proper farmhouse red Leicester with an outstanding flavour of delicate butterscotch followed by a subtle nutty aftertaste. The slightly sweeter notes of this cheese are offset with a sharper farmhouse tang and the flecked open texture and gorgeous russet colour mark out Butlers Farmhouse as a distinctive traditional red Leicester cheese with great character.
Butlers Farmhouse red Leicester, like all our cheese, is crafted in open vats and filled into individual moulds by hand before being bound with muslin cheese cloth and pressed. Maturation takes place in carefully controlled conditions in our cheese store for around 7 months in order to develop the perfect balance of farmhouse “zing”, a little sweetness and a little nuttiness for character. The russet-red round cloth bound cheese make quite a show lined up on the wooden shelves in our store but a wedge on a cheese board with its flecked open texture is even more exciting. A great cheese with a traditional fruit chutney.
Made at Wilson Fields Farm with pasteurised cows’ milk from the Butler family pedigree herd.
