Fan mail from Holland,

A few days ago I bought Blacksticks Blue for the first time, and it undoubted is the best blue cheese I have ever had.
I just can't stop eating it. I'm really sad because it's only once or twice a year in the store over here. But I promise, when it is for sale, I will be it's biggest fan :o)))

Q : Lancashire cheese
From: Sylvia Johnson, Newcastle upon tyne 14/06/2010
I purchased a piece of your Lancashire cheese from my local ASDA. It tasted wonderful, but within two days was covered on all surfaces with mold, completely inedible. It was stored in a perfectly working fridge & opened well in advance of the sell by/use by dates. The wrapping was intact when bought. Have you any tips on how to keep cheese fresh? This is not the first time this has happened, but, for me it will be the last.

Hi Sylvia, We're really sorry to hear that you were disappointed with your purchase, please accept our apologies. We recommend that you wrap your cheeses tightly in cling film or foil once they have been opened. This will prevent air from getting to the cheese. When cheese is exposed to air mould starts to form. It will also prevent the cheese from drying out, keeping it fresher.

This is a world-class cheese and in my opinion destined to become an English classic! Superb.

I was ontroduced to this as an after dinner cheese last Christmas and my wife and I both love it. I have yet to find the other types and the blue is only available in Sainsburys pre-packed, do you intend to suppy as a full cheese thus enabling us to buy the weight we want?
Thanks

Hi David, Great to hear that you have both become Blacksticks Blue Fans. Supermarkets tend to sell our blue cheeses as fixed weight packs, currently only Morrison's sell Blacksticks Blue as random weight but this isn't over a counter so you may not be able to find the weight you want. The good news is that many small deli's do sell it over the counter and so it is certainly worth checking with any independent cheese shops in your area. Sainsbury's are planning to sell Blacksticks Silk and Blacksticks Velvet towards the end of June but these will still be in a fixed weight pack I'm afraid.

Thanks for the feedback and so pleased that you like Blacksticks Blue! Also good to hear that an offer worked in finding new enthusiasts. Do look out for the other Blacksticks cheeses as you might rather like those too?
Q : Cheese origins
From: Matthew Williamson, Great Harwood 10/04/2010
Came across this cheese at a food festival, and it is delicous, but extra special for our family - my grandmother used to live at Blacksticks farm in the 1930's, before it was bought and a restaurant opened and remembers them making the first cheese when the farm was snowed in over winter (1931?). We didn't know they still made the cheese until recently, but it is great that they do.

That's great Matthew! Its Tom's brother, Peter Butler who lived and farmed at Blacksticks farm. If you let me know your Grandmothers name, as she was known back then, when I next see him I shall mention her to him. Has she tried Blacksticks Blue, does she like it?
Q : Wedding cheese cake base
From: Audrey Booth, Ackworth Pontefract 23/03/2010
I need a full round of a lancashire cheese as the base for a wedding cheese cake. What weight do you recommend I was thinking 2kg??
The wedding is on th 10th April I would need the cheese latest 8th April. Please advise. Thank you

Hi Audrey, I am afraid that this not not something that we are able to really help you with. Our Lancashire is made in 20kg blocks which would not be the right shape for you anyway and we are only able to sell 1.25kg pieces online (but the wrong shape for your cake). You might be better off discussing this with a cheese cake specialist or a local delicatessen? Sorry I cannot give you more help and good luck with the wedding.
Q : Visiting the Inglewhite Dairy
From: Graham Lowe, Langho 08/03/2010
Hello,
Is it possible to visit the Inglewhite Dairy and is there a Farm shop?
Many thanks

Hi Graham, I am afraid we are not set up for people to visit us at the dairy. I would point you in the direction of our online shop if you wish to purchase our cheeses direct from us? Thanks for your interest.
