| Hi Stan, Asda in Hartlepool would be a good option for you. Aside from that I would suggest you take a look in a large Tesco or M&S as we have a good range in both, many thanks. |

| Hi Yvonne, we do not recommend freezing BSB as the texture of the cheese becomes very grainy after freezing. |
| Q : Ewe's cheese |

Is there any chance of producing a variety of sheep's cheese? Afterall, there are plenty of sheep on the moors around Lancashire.
Thanks for the lovely cheeses you already produce. I am a great fan of local cheeses and believe they are as good and often better than other international cheeses. We need to believe again in our own produce! |

Hi Ann, it's funny you should say that! We recently launched a blue sheep's milk cheese called Blacksticks Velvet in Marks and Spencer for a month. It was extremely popular and the only reason it is not still there is due to the seasonality of the milk. However we aim to produce some more Blacksticks Velvet in the spring and will work to make the cheese more regularly available over time. So do keep your eyes peeled!
Our cheeses sell very well in the locality so I do think that more and more people are looking at what is available on their doorstep and most certainly in this country. Couldn't agree with you more. |

| Hi Ruth, cheeses can vary slightly from location to location for a number of reasons. Firstly, cheese is a natural product and so some variation is inevitable. We make all of our cheeses by hand to the same high standards but there can always be subtle differences between two cheeses. Secondly, different customers can have slightly different specifications for their cheese (for example the age of the cheese) and so we will select their order based on their requirements. Thirdly, it also depends how long the cheese has been stored for at the shop prior to its sale. Add all of these small things together and variations can become evident. I hope this answers your question fully. |

| Hello everybody who works for Butler's. I now live in Folkestone but occasionally come home to blackburn my home town.I could not find any Lancashire cheese in any supermarket down here in Kent.I mentioned this fact to a manager in one of the stores and asked him what he had against Lancashire as all the other county cheeses were to be found. I dont know he said but will find out. Some time later I found Lancashire cheese in them all. I know the cheese when I lived in Blackburn and visiting the Lancashire markets. It is very good and both creamy and crumbly go down well. I shopped at Sainsburies yesterday and found the Blacksticks Blue. I do not like this type of cheese but my partner does so I bought her a packet. She said it was excellent. Carry on the good work and convert the unconverted Southerners who probably only know about Cheddar. I did wonder about the cheese from cheshire but the webb tells all. Merry Christmas and a happy new Year. Ps have entered the draw. |

What a fantastic taste this cheese has, you have to go a long way to
taste a cheese as creamy as this one, it leaves a lovely taste in your mouth for quite a while afterwards, quite unlike supermarket cheese. Looking forward to others in your range. |

Hello and glad you like our Blacksticks Blue. Whereas most cheeses are
Made in a matter of hours, Blacksticks Blue is different in that the process takes a number of days and maturation is slow. It is this slow pace that helps to develop the lovely creamy texture that Blacksticks is becoming famous for. Blue cheeses tend to be quite creamy, as the blue mould that is added to the milk grows and has the effect of breaking down (softening)the curd. Ageing then enhances this further.
Hope this is helpful, thanks for your comments and I hope you continue
To enjoy our cheeses. |

| Lisa, I'm sorry we don't have an on line ordering facility at present. We are planning to have this in the future. I know that doesn't help you if you need a gift now. M&S has a lovely hamper that you can order online and have delivered between 17 and 20 December - this includes a number of our cheeses and is called 'Cheese Heaven'. There is also a cheeseboard gift available to order from the in store food ordering magazine at M&S. We supply this and you need to order it and your mum to pick it up in store between 22 and 24 December. We also produce Christmas hampers which include some of our cheeses for M&S, Asda and Tesco which you can buy in store nearer the time and should be able to order from their grocery websites nearer Christmas. |
| Q : Big up for sandwich! |

| The M&S Blacksticks Blue and steak sandwich is probably the best supermarket sandwich ever created! Why does it keep disappearing for months at a time? |

| Hi Mike, thanks for the feedback, I agree with you it's a real winner! Currently the sandwich features as part of the limited edition range which is refreshed every 8 weeks. But good news, the feedback from M&S is also very positive so I expect the Blacksticks sandwich might become part of the Gourmet to Go range and be available all year round. Glad you enjoy it and thanks for your comments. Bronwen |
| Q : can I eat the rind? |

| Should I eat the rind or cut it off? |
| A: can I eat the rind? |

| Great question - You can eat the rind on the blues (Blacksticks, Butlers & Beacon) & Goats Cheese (Kidderton Ash & Ravensoak). Give it a miss on the rinded territorials (Trotter Hill, Goosnargh Gold and Rothbury Red) only because it will spoil the taste of the cheese. |
