| Blacksticks Blue doesn't need the amount of packaging you put on it, all that cardboard and plastic, it really annoys me. |

| Hi Georgina, thanks for your note. Yes I agree with you. Times have changed and we are evaluating all of our packaging. The card sleeve is to go; it will be replaced by a label in the New Year. The black tray is needed to protect the cheese from breaking in transit but is made from 50% recycled plastics and is itself recyclable. Thanks for your comments. |

| I used to think that all Lancashire cheeses were quite dry and to be honest not that nice a cheese! Then a friend gave me some of your Creamy Lancashire and it was quite different. How can this be so and what are you doing that is different? |

We like to think that Butlers make the ""real"" Lancashire cheese! Our real strength is giving the cheese the time that it needs to develop and mature. Mass produced Lancashires often have excessive amounts of starter culture (bacteria used to acidify the milk in cheesemaking) in them which can result in something quite different. We still use the traditional recipes for Lancashire, developed by the Butler family in 1932.

| Glad you like it! Anyone else who wants it just go to our home page and download it for free. We had a full day of photography undertaken by a professional photographer when we were developing the new website. Aside from asking him to get a bit close to the goats, we asked him to drive around the local lanes and capture the area in images. It was a beautiful day and the results were amazing. Seemed a shame not to share a few in some way and so we came up with our free screensaver. Many of us have it in the office to help with those stressful moments! |

| Hi Chloe! The blue in blue cheese is actually a type of mould called penicillium roqueforti. We add a small amount of this mould to the milk. When the cheeses have been made, we pierce them using stainless steel needles which allow air into the centre of the cheese. The blue mould then starts to grow and the cheese develops the blue veining that you see in Blacksticks Blue. Hope this helps! |

| I too am from a Lancastrian family going back many generations, and I would like to say thank you to Butlers for remaining true to their roots and being proud of them. Too many companies grow, get bought and move away from their roots. You remain exactly where you should be, in the heart of rural Lancashire, supporting the county that supports you. |
