| Hi Chloe! The blue in blue cheese is actually a type of mould called penicillium roqueforti. We add a small amount of this mould to the milk. When the cheeses have been made, we pierce them using stainless steel needles which allow air into the centre of the cheese. The blue mould then starts to grow and the cheese develops the blue veining that you see in Blacksticks Blue. Hope this helps! | |
