| Hi Ruth, cheeses can vary slightly from location to location for a number of reasons. Firstly, cheese is a natural product and so some variation is inevitable. We make all of our cheeses by hand to the same high standards but there can always be subtle differences between two cheeses. Secondly, different customers can have slightly different specifications for their cheese (for example the age of the cheese) and so we will select their order based on their requirements. Thirdly, it also depends how long the cheese has been stored for at the shop prior to its sale. Add all of these small things together and variations can become evident.
