Blacksticks Blue & Parma Ham Salad with Wild Rocket

Ingredients
- 150g Blacksticks Blue
- 4 slices Parma ham
- 1 dessert pear
- 2 handfuls wild rocket, washed
- small handful of walnut pieces
- juice of 1/2 lime
- 2-3 tbsp olive oil
- freshly ground black pepper
Method
- Remove the rind from the Blacksticks Blue cheese, crumble and cut the slices of Parma ham in half.
- Halve, quarter, core and slice the pear.
- Arrange the cheese, ham, pear, wild rocket and walnuts on two plates.
- Whisk together the lime juice and olive oil.
- Pour this dressing over the salad, season with freshly ground black pepper and serve at once with fresh crusty bread and extra olive oil if desired.
