Blacksticks Blue & Parma Ham Salad with Wild Rocket

Method

  1. Remove the rind from the Blacksticks Blue cheese, crumble and cut the slices of Parma ham in half.
  2. Halve, quarter, core and slice the pear.
  3. Arrange the cheese, ham, pear, wild rocket and walnuts on two plates.
  4. Whisk together the lime juice and olive oil.
  5. Pour this dressing over the salad, season with freshly ground black pepper and serve at once with fresh crusty bread and extra olive oil if desired.
