Bruschetta With Trotter Hill Tasty, Sunblush Tomatoes & Fresh Basil

Ingredients
- 1 part baked garlic loaf
- 50-75g Butlers Trotter Hill Tasty, crumbled into small pieces
- 240g pot sunblush tomatoes, drained (reserving the oil)
- small handful basil leaves
- salt and freshly ground black pepper
Method
- Preheat the oven to 200°C / 400F / Gas 6.
- Cut the garlic loaf into slices, arrange on a baking sheet and cook for 3-5 minutes on each side.
- Arrange the cheese and tomatoes on the bruschetta and return to the oven for a few minutes or until the cheese starts to soften.
- Spoon over a little reserved oil, scatter with basil leaves and freshly ground black pepper and serve at once with a glass of champagne to get any gathering off to a great start.
