Cheese Palmiers with Parma Ham and Horseradish Cream

These impressive cheese Palmiers with Parma ham and horseradish cream are a wonderful starter to serve on any special occasion.
Ingredients
- 375g pkt ready rolled puff pastry
- a little flour
- 100g Butlers Farmhouse Tasty Lancashire, finely grated
- a little beaten egg
- 300ml creme fraiche
- 1tsp creamed horseradish/horseradish sauce (or to taste)
- 8 slices Parma ham
- handful wild rocket
Method
- Preheat the oven to 220°C / 425F / Gas 7.
- Unroll the pastry on a lightly floured work surface.
- Sprinkle the cheese over the pastry and roll along both long edges into the middle to make two spirals.
- Brush with a little beaten egg to stick the two rolls together. Slice the roll thinly into about 32.
- Arrange on baking sheets.
- Chill for 10 minutes or store in the freezer, or until ready to serve then bake for 10-15 minutes in the preheated oven.
- Remove from the oven and transfer to a wire rack to cool.
- When ready to serve, stir together the creme fraiche and horseradish.
- Set two pastry Palmiers on each plate and top with a dollop of the flavoured creme fraiche.
- Curl each slice of Parma ham and set in the centre.
- Arrange two Palmiers on either side, scatter a few leaves of rocket and serve with chilled champagne.
