Kidderton Ash with Red Onion Marmalade
Serves 4
Fresh tasting goat’s cheese surrounded by fine ash then spread onto warmed bread with a succulent hand made marmalade. This is just a quality snack or supper dish.
Ingredients
- 1 Roll of Butlers Kidderton Ash Goat’s Cheese
- 4 medium red onions - sliced
- 25 ml vegetable oil
- 50 ml red wine
- 25 ml ruby port
- 1 dessert spoon redcurrant jelly
Method
- To make the marmalade warm the oil through gently on the stove, add the onions and cook gently until they soften.
- Add the wine and the port and reduce the liquid by half.
- Add the redcurrant jelly and reduce the liquid until the onions have a glossy coating.
- Whilst the marmalade is cooling, slice the cheese into four portions (slicing it on a 45 degree angle gives it an interesting presentation)
- Set the cheese upright on a small plate with some of the marmalade. Add salad, celery sticks and warm bread or crackers.
